Chicken Piccata

Ingredients
- 4 large skinless, boneless chicken breasts halves
- ½ cup all purpose flour
- 2 tablespoons vegetable oil (more if needed)
- 1 clove garlic, minced
- ½ lemon thinly sliced
- 2 tablespoons minced Italian parsley
- 2 tablespoons capers
- 2 pouches of Daily Pantry Lemon Chicken Simmer Sauce
Directions
Preheat the oven to 200˚ place an oven proof serving platter in the oven
Dredge the chicken pieces through the flour. Shake off excess flour
Heat the vegetable oil in a skillet and pan fry the chicken pieces until golden brown. Work in batches placing the cooked chicken on the platter in the warm oven and adding oil as needed to the skillet. When the chicken is complete drain most of the oil from the skillet leaving a thin coating.
Cook and stir the minced garlic add in the two pouches of Daily Pantry Lemon Chicken Simmer Sauce –bring to a boil.
Reduce heat and add the warmed chicken from the oven to the skillet. Cook for 5 minutes and then remove from heat
Arrange the chicken medallions on serving plates
Spoon the sauce over the medallions then sprinkle the Italian parsley and capers over the top and garnish with the lemon slices
