Lemon & Fig Chicken

Ingredients
- 12 chicken thighs
- 1-½ pounds dried figs
- 1 lemon sliced
- ¼ cup brown sugar
- 1 tablespoon fresh chopped parsley
- 1 pouch of Daily Pantry Lemon Chicken Simmer Sauce
Directions
Preheat oven to 400˚
Place figs and lemon slices in the bottom of an 11 x 16 inch roasting dish. Arrange chicken on top
Pour contents of the Lemon Chicken Simmer Sauce over the chicken
Bake at 400˚ for approximately 50 minutes, basting frequently (turn figs if they begin to brown)
Remove chicken, figs and lemon slices and place on a warm platter. Pour the juice from the roasting pan over the chicken as a sauce.
Garnish with the parsley
